Amidst these exceedingly difficult times, we’re grateful for the silver linings, whether it’s taking a free quilting class online or getting a call or email from an old friend that we haven’t heard from in a while.
On social media, we’ve also loved getting cooking tutorials and tips from some of our favorite celebrities. Among the bunch, Joanna Gaines began sharing quarantine cooking videos that have kept us delightfully entertained and given us quite a bit of recipe inspiration. Over the past weekend, with the help of her daughter Emmie Kay serving as sous chef, Gaines walked us through making Spinach Tortellini Soup from her upcoming cookbook, Magnolia Table, Volume 2.
“After being home for almost two weeks now, everyone has found their own creative ways to spend their days. I’ve loved the extra time I’ve gotten in the kitchen to create and make meals for the family,” Gaines captions the video. “I wanted to share another one of my recipes, Spinach Tortellini Soup. It’s hearty and cozy, perfect for this Sunday afternoon,” she continues, before signing off by asking her fans how they’re finding ways to be creative at home right now.
In the mini cooking lesson, Gaines pulls together common ingredients like vegetable or chicken broth, garlic, onion, and spinach, adding helpful substitution suggestions throughout. No cannellini beans? Swap for another bean you have on hand. No cheese tortellini? Use whatever kind of pasta you want.
For the Gaines kids, the soup is served with grilled cheeses on the side, but grown-ups may like it with extra beans and spinach for a more substantial meal, or served with some baguette slices (if available).
