If you love chicken sandwiches, it’s hard to outdo Popeyes chicken sandwich. When one of Southern Living’s writers tried it for the first time, she wrote:

Biting into it, I was immediately struck by the brioche bun. It’s toasted but not too toasted, and its softness lets the crunch of the crispy batter shine. The chicken-to-mayonnaise ratio is ideal, with just enough mayo to lend some moisture to the considerable chunk of white meat, but not so much that it slides out when you bite it. (Insert praise hands here.) The chicken is well-seasoned and tender, and you can tell that it came from an actual bird which made me both happy and sad. But my favorite part, and call me crazy, was the pickles. An amateur pickle connoisseur, I’m often repulsed by fast-food pickles, but these thin little guys stand on their own, and snuggled up on a thick bed of crispy chicken is right where they belong.

Well, with Leap Day coming once but every four-ish years, we think this is an excellent reason to put down our oven mitts and order delivery. We guess it’s time to carve out two nights next week for Popeyes.
